It's Shrove Tuesday on 21st February 2023 which is the perfect opportunity to talk about how we can eat our delicious honey! American style pancakes taste great with honey. In this recipe, we suggest you try with slices of banana and walnuts too. Delicious!
135g/4¾oz plain flour or buckwheat flour in GF
1 tsp baking powder
½ tsp salt
1 tbsp caster sugar
1 tsp Wesley Cottage Bees honey
130ml/4½fl oz milk of choice
1 large egg, beaten
2 tbsp melted butter, cooled slightly or olive oil, plus some more for cooking
Sift the all the dry ingredients into a large bowl.
In another bowl, lightly whisk the milk and egg, then whisk in the melted butter.
Combine the wet ingredients into the dry using a fork and beat until you have a smooth batter. Let the batter stand for a few minutes.
Heat a non-stick frying pan over a medium heat and add a knob of butter or olive oil. When it's melted, add enough batter to make the size desired.
You will know it's ready to turn when the top of the pancake begins to bubble, then turn it over and cook until both sides are golden brown.
Repeat until all the batter is used up. You can keep the pancakes warm in a low oven, but they taste best fresh out the pan. You can also freeze the ones you don't eat and/or double up the recipe.
Serve with sliced bananas, chopped walnuts and lashings of Wesley Cottage Bees honey!
