Honey & Pecan Oat Bars

These indulgent oat bars are the perfect snack for when you're on the go! Use our delicious honey for the perfect balance of sweet and crunch!

Ingredients


  • 140g butter

  • 120g soft brown sugar

  • 3 tbsp Wesley Cottage Bees honey

  • 180g rolled organic oats

  • 80g chopped pecans or mixed nuts

  • 140g dried chopped cranberries or apricots


Put the butter, soft brown sugar and honey in a small pan. Heat gently until melted. Tip oats, pecans and chopped dried fruit into a medium bowl. Pour over the melted butter mixture and combine. Transfer to a 20cm x 20cm greased baking tray and cook at 160C/140C fan/gas 4 for 30-40 mins or until light brown. Remove and cool in tin, then transfer onto a cooling rack, then slice into 12-16.


We like to drizzle some extra honey over the top just before eating!


These will keep in an airtight container for up to 3 days.
