Delicious no dairy honey bread

This bread is simply gorgeous and it's one for the whole family! You could even get the kids helping you, it's so simple to make. WARNING you might get very sticky!! It’s sweet (obviously), super soft and you’ll just want to eat it all in one go! Try not to though….


This recipe makes one small loaf.

Recipe:


125g plain flour

100g wholemeal flour (or use 225g of spelt flour total)

115g brown sugar (or try coconut sugar)

115g Wesley Cottage Bees honey

150ml pre boiled hot but not boiling water

1 tsp bicarbonate of soda

Zest of 1 lemon

Good pinch of cinnamon



Method

1 Preheat the oven to 160C/325F/gas mark 3.

2 Butter a 450g loaf tin and line it with baking paper.

3 Mix the flours and sugar together in a large bowl.

4 Meanwhile melt the honey and water in a small pan. Add the bicarbonate of soda over the water mixture and stir. Pour this wet mixture over the dry ingredients, add the lemon zest and cinnamon and mix.

4 Put the mixture into the lined tin and bake in the oven for 50–60 minutes.

5 Remove from the tin and brush the top of the warm bread with more honey (of course!) for a nice sticky finish. Cool, then serve thinly sliced.


Try serving with butter or peanut butter. Yum!
