Honey and nut oat bars

We all love a sweet treat - right? These honey and oat bars are easy to make and simply delicious. Great for snacking or putting in the kids lunch boxes (take out the nuts for nut free schools). Serve with a glass of milk or a smoothie.


Ingredients

150g butter

150g coconut sugar

3 tbsp honey

180g whole oats

100g chopped nuts

120g dried chopped apricots or raisins


Method


Pre heat the oven to 160C/140C fan/gas 4.

Put butter, coconut sugar and honey in a small pan and gently heat until melted. Alternatively you can microwave, but be careful not to boil.


Put the whole oats, mixed nuts and apricots or raisins into a large mixing bowl. Pour the melted butter mixture and stir until all of the oats are coated.


Place into a 20cm x 20cm greased and lined baking tray and put in a pre heated oven for 30-40 mins.


Leave for 20 minutes and then remove and put on a cooling rack. When cool, slice into 12-16 slices. These will keep in an airtight container for up to 3 days. You can wrap some parchment paper round the middle with some string if you're giving them away or selling them for a bake sale.
