Makes 12 cookies
120g coconut oil or butter
30-50g brown sugar (depending how sweet you like them.
2-3 tbsp milk of choice
240g oat flour (grind organic whole oats finely in a blender)
1 tsp baking powder
1 tbsp desiccated coconut
1/4 tsp salt
100g dark chocolate chips
Preheat oven to 180C/160C fan/350F
Add the softened coconut oil or butter into a large bowl with the honey and sugar and combine.
Add the ground oats, desiccated coconut, baking powder and salt
Fold in the chocolate chips, then scoop out using a table spoon and make into balls. Flatten out slightly and arrange on a baking sheet lined with baking paper.
Bake for 15 minutes, then leave to cool completely
